• 1 granny smith apple, unpeeled, cored and halved
  • 1 container Darista Dips Roasted Beet Hummus
  • 4-ounce fresh goat cheese
  • 1⁄4 cup fresh mint leaves
  • 4 pitas torn up
  • Olive oil
  • Sea salt
  • {Yields: 6 servings}


  1. Preheat the oven to 400°F.
  2. Cut each pita in half and then into 6 triangular pieces.
  3. Arrange the pita onto a baking sheet and brush with olive oil.
  4. Sprinkle with a pinch of sea salt.
  5. Bake for 8-10 minutes until slightly golden and toasted. Set aside.
  6. Cut apples into 1⁄4 inch wedges or julienne. Note: if you are preparing apples in advance, place wedges in cold water with a squeeze of lemon juice to prevent browning.
  7. Crumble goat cheese into 1⁄2 inch chunks.
  8. To assemble: Spread about 2 tablespoons of Roasted Beet Hummus onto toasted pita. Top with 2 apple slices and sprinkle goat cheese crumbles. Garnish with torn mint leaves. Enjoy!
