INGREDIENTS:
- 1 granny smith apple, unpeeled, cored and halved
- 1 container Darista Dips Roasted Beet Hummus
- 4-ounce fresh goat cheese
- 1⁄4 cup fresh mint leaves
- 4 pitas torn up
- Olive oil
- Sea salt
- {Yields: 6 servings}
DIRECTIONS:
- Preheat the oven to 400°F.
- Cut each pita in half and then into 6 triangular pieces.
- Arrange the pita onto a baking sheet and brush with olive oil.
- Sprinkle with a pinch of sea salt.
- Bake for 8-10 minutes until slightly golden and toasted. Set aside.
- Cut apples into 1⁄4 inch wedges or julienne. Note: if you are preparing apples in advance, place wedges in cold water with a squeeze of lemon juice to prevent browning.
- Crumble goat cheese into 1⁄2 inch chunks.
- To assemble: Spread about 2 tablespoons of Roasted Beet Hummus onto toasted pita. Top with 2 apple slices and sprinkle goat cheese crumbles. Garnish with torn mint leaves. Enjoy!
